Blueberry Breakfast Sausage Skillet


12 oz organic hash browns

12 eggs

1/2 cup frozen, organic, chopped spinach (squeezed well)

1 package organic, blueberry breakfast sausage, sliced

1/4 cup reduced fat feta cheese

salt and pepper to taste


In pan, over medium heat, brown hash browns. In a second pan, scramble eggs, spinach, sausage and feta. When eggs are set, slide them onto hash browns and serve.
