Sweet Potato Soup with Red Curry


3 lbs peeled sweet potato
2 qts chicken or vegetable stock
1/2 red onion, diced
1/2 cup carrot, diced
2 Tbsp red curry paste
1/4 cup cilantro, chopped
1 can coconut milk
salt & pepper to taste


In a stock pot place sweet potatoes, onions, carrots, stock and curry paste and simmer for 1 hour, until potatoes are cooked all the way through.

Puree using a hand blender and finish with coconut milk and cilantro.
