Banana Peanut Butter Stuffed French Toast

8 slices firmer bread (not the real soft stuff)

2 to 3  ripe bananas

½ cup peanut butter

4 eggs

1/3 cup heavy cream or milk

2 teaspoons vanilla

Pinch salt

½ teaspoon cinnamon

3 to 4 tablespoons butter

2 tablespoons powdered sugar, optional

½ to 3/4 cup honey, optional

Spread peanut butter on each slice of bread.  Peel banana and slice bananas. Place sliced bananas on to cover peanut butter on 4 slices of bread. Drizzle a small amount of honey on each piece of bread that does not have banana on it. Place honey drizzled piece of bread on top of a piece with bananas on it to make a sandwich. Repeat until you have made 4 sandwiches.

In a shallow dish, whisk together, the eggs, cream, vanilla, salt and cinnamon.

Heat skillet or a griddle to medium heat. Add  butter and heat until it melts.  Dip 1 sandwich at a time into egg mixture and place into skillet. Cook until golden brown, about 3  minutes, before flipping.  Then, cook another 3 to 4 minutes on the other side.  Remove from skillet and sprinkle a little powdered sugar on top.  Drizzle with honey.
