Salmon Salad with Basil Prosecco Vinaigrette


4 oz Salmon

1/2 cup mixed greens, trimmed and Cleaned

pickled red onion

8 pcs oranges segmented

Radish slices, thinly sliced

Toasted Pistachios

Basil Prosecco Vinaigrette:

1/2 cup Champagne Vinaigrette

1/2 cup Prosecco

1 cup Basil

1/2 cup Parsley

1 Shallot

3 Cloves Garlic

4 cups Salad Oil

1 tsp Dijon Mustard

1 tsp Honey

Salt and pepper

To make Vinaigrette:

In a blender place basil, parsley, garlic, shallot, mustard, honey, Prosecco and champagne vinegar cover blender and blend. You want to pick a medium speed then slowly start adding your salad oil.  Finish with a pinch of salt and pepper.

To assemble salad:

Grill salmon, seasoned with salt, pepper and parsley. While grilling salmon toss your greens with the prosecco vinaigrette and a touch of salt. Add oranges, radish, pickled red onions, and pistachios to top of salad. When the salmon is finished cooking place and top of salad and enjoy.
