1/3 cup fresh mushrooms, chopped
1/3 cup onion, chopped
1/3 cup pepper, chopped
10 slices pepperoni
2 tablespoons tomato paste
2 teaspoons Italian seasoning
¼ teaspoon garlic powder
¼ teaspoon salt
¼ teaspoon pepper
1/3 cup breadcrumbs or oatmeal
1 ½ pounds ground beef
Provolone Cheese or Shredded Mozzarella
In a food processor, combine the mushrooms, onions, green peppers, pepperoni, tomato paste and Italian Seasoning, garlic powder, salt and pepper. Cover and pulse just until blended. Transfer into a bowl and combine with oatmeal or breadcrumbs and ground beef. Shape into meatballs, hamburger patties or place in muffin tins, depending on what you would like.
If making meat balls bake at 350 for 15 minutes. Lay single layer on pan to freeze and then transfer to Ziploc bag. To serve: Thaw and reheat. For meatballs you can dip into pizza sauce and sprinkle with Shredded Mozzarella.
Meatloaf muffins can be baked at 350 for 45 minutes. Cool and place in Ziploc to freeze. To serve: Thaw and reheat. Top with pizza sauce and shredded mozzarella and heat just until warm and cheese is melted.
Burgers can be frozen prior to cooking. Place patties in Ziploc bag and separate with wax paper. To serve: Thaw. Grill burgers on lightly oiled grill. Serve on buns. Top with a slice of cheese and pizza sauce.
