4 1⁄2 cups flour

1 1⁄2 cups butter, cubed

2 cups powdered sugar, divided

8 large eggs

Zest of 3 lemons

1/2 cup fresh lemon juice (approx. 3 lemons)

3/4 cups flour

2 teaspoons baking powder

2 teaspoons salt

4 cups sugar


Preheat oven to 350 degrees. Spray an 11 x 17 inch pan (jelly roll) with cooking spray. Combine first two ingredients with 1 1/2 cups of powdered sugar in a food processor. Pulse until crumbly. Spread crust evenly on the bottom of a sheet pan and press down lightly. Bake for 8 to 10 minutes. In a large bowl, use a mixer to beat all filling ingredients together. Pour them over hot crust. Bake in a preheated 350 degrees for 30 to 40 minutes or until it is set in the middle. Refrigerate to cool. Sprinkle powdered sugar over the top before cutting into squares.
