Buffalo Wings Created in 1967 Buffalo, NY.

1lb- Fresh Chicken Wings/ Jointed

Cooled and patted dry, removing as much moisture as you can.

Fry no more than eight to 10 wings at a time in oil at 375*F, 12 to 14 minutes, until skin is crispy and golden brown on the outside and chicken wings are cooked through to the bone on the inside to 165*.

(No flour, salt or seasoning just naked wings.)

Authentic Buffalo Wing Sauce

8 tablespoons of (Frank’s) hot sauce

8 tablespoons unsalted butter

1 1/2 tablespoons white vinegar

1/4 teaspoon cayenne pepper

1/8 teaspoon garlic powder

1/2 teaspoon Worcestershire sauce

salt to taste

Preparation:

Mix all the ingredients in a saucepan, and over low heat bring to a simmer, stirring occasionally, and then turn off.

Some Fun sauces served over our boneless wings

Sriracha Honey Wing Sauce

5 tablespoons unsalted butter
1/3 cup honey, plus more for drizzling
1/4 cup Sriracha (Asian chile sauce)
1 tablespoon soy sauce
2 teaspoons fresh lime juice
Mix all the ingredients in a saucepan, and over low heat bring to a simmer, stirring occasionally, and then turn off.

Thai Chili Sauce

3 tablespoons vegetable oil

1/4 cup seasoned rice vinegar

2 tablespoons soy sauce

2 garlic cloves (pressed)

1 teaspoon ginger (minced)

½ teaspoon red chili pepper flakes

1/4 cup sweet chili sauce (Thai)

2 teaspoons Sriracha sauce
