1 lb. fresh strawberries
8 oz pkg cream cheese, softened
1/2 cup powdered sugar
1 tsp vanilla extract
2-4 graham crackers crushed
Rinse and clean strawberries. Cut off tops and core out center using a pairing knife. Do not go all the way through to the bottom of the strawberry, you want to make a core pocket.
In a mixing bowl, beat cream cheese, sugar and vanilla on medium speed until smooth and creamy. Put mixture into pastry bag or zipper lock bag with corner cut off. Fill strawberries with mixture. And sprinkle tops with graham cracker crumbs. Refrigerate until ready to serve.
White Chocolate Sauce (optional)
8 oz white chocolate chips
¾ cup heavy cream
Chop chips into small pieces. Place chips into bowl. Bring heavy cream to boil. Once boiling remove immediately and pour over white chocolate chips. Whisk ingredients together. It will thicken as it cools. For faster cooling place bowl into a lager bowl filled with ice and water.
