Catherine joined FOX 11′s Emily Deem on Good Day Wisconsin to share some great Valentine’s Day meals!

Sirloin Spoon Roast

Ingredients:

Olive oil to cover top and bottom

Kosher or coarse sea salt

Ground black pepper

4-7 garlic cloves

1 can of beef consume

Roasting pan with rack or some vegetables to make shift a rack Instant-read thermometer – optional Take your spoon roast and cover it all sides top and bottom with a good olive oil, season all over with salt and pepper, slice the garlic cloves in slivers and take a paring knife and cut small slits all over the roast, stuff with the garlic.

Add one half to the whole can of beef consume for juice. Place your roast at room temp onto the roasting rack, if you don’t have a roasting rack make your own in a large 9×13 cake pan by putting carrots, celery, or onions on the bottom then put the roast on top of the veggies!

Roast for 15 minutes, then turn down oven to 225 and roast 45 minutes more per lb. Med-rare is 140 degrees, let rest 15-20 minutes roast will get 5-10 degrees more done during resting period. Slice against the grain!

Quick Tiramisu

1 pkg. (8oz) cream cheese at room temperature

1/4 cup sugar

1 cup heavy cream
1/2 tsp rum extract

1/2 cup left over strong coffee or espresso

1 box of regular size Nilla Wafers

1/2 cups mini chocolate chips

A few large strawberries optional for the top

In a medium bowl with electric mixer beat cream cheese and sugar until light and fluffy about 2 minutes. Stir in heavy cream and rum extract, beat about 2 more minutes until it’s stiff.  Dunk your Nilla Wafers one by one in the cooled coffee and place on the bottom and sides of a glass dish or pac. Spoon in filling. Sprinkle your mini chocolate chips on top and garnish with a large strawberry. Chill until ready to serve.

This is for a special treat on a night like Valentine’s Day!  I believe in moderation and treats once in a while!
