1 lb frozen cranberries
2 cups sugar
½ cup fresh squeezed orange juice
½ cup sherry vinegar
2 ½ cups vegetable oil
In a small saucepan cook the cranberries and sugar until berries are soft. Pass through a fine mesh strainer to filter out skins and seeds.
Add berries, juice and vinegar to a blender and puree until smooth. Slowly add the oil until mixture is emulsified. Season to taste with plenty of salt and pepper.
Pour dressing over favorite salad mix and add toppings of your choice.
