Lemon chicken and wild rice soup recipe from Zuppas in Neenah.

Ingredients:

1/4 cup olive oil
1/2 cup diced red onions
1/2 cup diced celery
1/2 cup diced carrot
2 cups diced cooked chicken meat
3 lemons
2 quarts chicken stock
1 cup heavy cream
2 cups cooked wild rice
Salt and pepper to taste
1 bunch fresh thyme
Cornstarch to thicken soup

Directions:

Put olive oil in a stock pot and sauté onion, celery and carrot about 5 minutes until lightly browned. Add cooked chicken meat. Add chicken stock and simmer for 30 minutes. Add fresh chopped thyme. Thicken with cornstarch ( thick enough to stick to spoon) Zest three lemons and add the zest. Juice lemon and also add to soup. Add heavy cream and cooked wild rice.Taste and adjust taste with salt and pepper if needed.

* If too thick you can add a little more cream.
